  • The organic farm of El Albergue was an unexpected treat. Located just outside of the main hotel grounds, it is worth visiting. It is home to the organic gardens that provide produce for their restaurants. It is also home to the DestilerĂa Andina, their coffee roastery, and the Pachamanca lunch. The Pachamanca lunch experience was a fantastic way to check out the farm, distillery, and coffee roastery, and get a great lunch all in the same visit. Pachamanca is a traditional way of cooking using the earth as an oven. They use granite stones that have been heated to a very high temperature to cook potatoes, beans, and meats (chicken, pork, and lamb). The food is cooked directly on the rocks, covered with fresh herbs and wet canvas, then buried. It all cooks in just 15 minutes. This was much faster than I expected. The meat comes out with crispy skin, moist, and absolutely delicious. It is served with a salad of organic greens from their farm, a delicious vegetable bake, and a big pitcher of their house-made chicha morada (purple corn drink). The meal is finished with a shot of their anis liquor (made at the distillery) and a delicious dessert made fresh in the bakery at El Albergue. You get a chance to tour the farm, distillery, and coffee roastery during lunch. The host was gracious and well informed. It was a fantastic way to spend the afternoon. Just a note, you need to book the Pachamanca experience through the hotel at least a day in advance. The whole farm experience was one of the high points of my trip to Ollantaytambo.
